  • 1 cup wild rice
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped

  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat and add 2 tablespoons of olive oil.
  2. Sauté chopped onions, carrots, and celery until tender (about 5 minutes).
  3. Add diced chicken breasts and minced garlic; cook until chicken is no longer pink (approximately 5 minutes).
  4. Pour in chicken broth and bring to a gentle boil. Stir in rinsed wild rice, thyme, and bay leaves.
  5. Reduce heat to low, cover the pot, and let simmer for 45 minutes or until rice is tender.
