  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 4 medium potatoes, diced (about 1 lb)
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 tsp dried thyme (or 2 tsp fresh)
  • Salt and pepper to taste

Instructions

  1. Chop vegetables and cube the beef.
  2. In a skillet over medium-high heat, brown the beef cubes on all sides.
  3. Sauté onions and garlic in the same pan until onions are translucent.
  4. Transfer seared beef and sautéed onions into the crockpot; add carrots, potatoes, broth, tomato paste, bay leaves, thyme, salt, and pepper.
  5. Cover and cook on low for 8 hours or high for 4 hours until the meat is tender.
  6. Adjust seasoning before serving; remove bay leaves.
