  • 2 medium sweet potatoes, diced (about 2 cups)
  • 1 can (15 oz) low-sodium black beans, rinsed and drained
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 3 cups vegetable broth (low-sodium)
  • 2 tsp chili powder (adjust to taste)
  • 1 tsp ground cumin
  • 1 bell pepper, chopped (any color)
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Prepare sweet potatoes by peeling and dicing them into bite-sized cubes.
  2. In a skillet over medium heat, sauté chopped onions in olive oil until translucent; add minced garlic and cook until fragrant.
  3. In the crockpot, combine sautéed onions and garlic with sweet potatoes, black beans, tomatoes, bell pepper, vegetable broth, chili powder, cumin, salt, and pepper. Stir well.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Before serving, squeeze fresh lime juice over the top.
