  • 2 cups butternut squash, peeled and cubed
  • 8 oz penne pasta
  • 1 lb Italian sausage (spicy or sweet)
  • 3 cups fresh spinach, packed
  • 3 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 2 tbsp extra virgin olive oil
  • ½ cup Parmesan cheese, grated
  • ½ cup heavy cream or milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (optional for roasting).
  2. In a large pot of salted boiling water, cook the penne according to package directions until al dente. Reserve ½ cup of pasta water and drain.
  3. In a skillet over medium heat, add olive oil. Brown the sausage for about 5-7 minutes until crispy.
  4. Add chopped onion and minced garlic; sauté until onions are soft (about 3-4 minutes).
  5. Stir in cubed butternut squash with salt and pepper; cook until tender (8-10 minutes).
  6. Pour in cream (or milk) and reserved pasta water gradually until desired consistency is reached.
  7. Toss cooked pasta and spinach into the skillet; combine gently until spinach wilts.
  8. Serve hot topped with freshly grated Parmesan cheese.
