- 8 oz penne pasta

- 3 cups fresh spinach, packed

- 1 medium yellow onion, chopped
- 2 tbsp extra virgin olive oil
- ½ cup Parmesan cheese, grated
- ½ cup heavy cream or milk
- Salt and pepper to taste
Instructions

- In a large pot of salted boiling water, cook the penne according to package directions until al dente. Reserve ½ cup of pasta water and drain.

- Stir in cubed butternut squash with salt and pepper; cook until tender (8-10 minutes).
