  • 4 cups beef broth
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper (or to taste)
  • 1 bay leaf
  • 2 tbsp olive oil
  • Fresh parsley (optional, for garnish)

Instructions

  1. Prepare your ingredients by chopping the cabbage, dicing the onions, mincing the garlic, and slicing the carrots.
  2. In a large pot, heat olive oil over medium heat. Add onions and cook until soft (about 5 minutes), then add garlic until fragrant.
  3. Increase heat slightly and add ground beef; cook until browned (6-8 minutes), breaking it apart as it cooks.
  4. Stir in diced tomatoes, carrots, cabbage, bay leaf, salt, pepper, and beef broth until well combined.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for about 30 minutes or until cabbage is tender.
  6. Taste and adjust seasonings if necessary. Serve hot, garnished with fresh parsley if desired.
