  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Chop the carrots, celery, onion, and mince the garlic.
  2. Layer the chicken breasts in the bottom of your crockpot. Add the chopped vegetables and rinsed rice on top.
  3. Pour the chicken broth over all ingredients until submerged.
  4. Season with thyme, bay leaves, salt, and pepper; stir gently.
  5. Cover and cook on low for 6-8 hours or high for 4 hours until tender.
  6. Shred the chicken before serving and mix back into the soup.
