Ingredients

  • 34 boneless, skinless chicken breasts
  • 16 oz frozen pierogis (potato and cheese recommended)
  • 4 cups low-sodium chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, sliced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley (optional for garnish)

Instructions

  1. Chop the onion, carrots, celery, and mince the garlic.
  2. In a skillet over medium heat, sauté the onions in oil until translucent. Add garlic and sauté for another 30 seconds.
  3. Transfer the sautéed mixture to your crockpot. Add chicken breasts, frozen pierogis, carrots, celery, thyme, salt, and pepper.
  4. Pour chicken broth over all ingredients until just covered.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, shred the chicken directly in the pot using two forks and stir gently.
