- 3–4 boneless, skinless chicken breasts
- 16 oz frozen pierogis (potato and cheese recommended)
- 4 cups low-sodium chicken broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, chopped
- 2 stalks celery, sliced
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley (optional for garnish)
Instructions
- Chop the onion, carrots, celery, and mince the garlic.
- In a skillet over medium heat, sauté the onions in oil until translucent. Add garlic and sauté for another 30 seconds.
- Transfer the sautéed mixture to your crockpot. Add chicken breasts, frozen pierogis, carrots, celery, thyme, salt, and pepper.
- Pour chicken broth over all ingredients until just covered.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, shred the chicken directly in the pot using two forks and stir gently.
