  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 2 green onions, finely chopped
  • ¼ cup low-sodium soy sauce
  • ¼ cup ketchup
  • 2 tbsp rice vinegar
  • 2 tbsp granulated sugar
  • 1 tbsp cornstarch

Instructions

  1. Chop chicken breasts into bite-sized pieces.
  2. Set up three bowls: one with flour mixed with a pinch of salt, one with beaten eggs, and the last filled with panko breadcrumbs.
  3. Dip each chicken piece into flour, then eggs, followed by panko breadcrumbs, ensuring they are well-coated.
  4. Heat oil in a skillet over medium-high heat and fry chicken pieces until golden brown (3–4 minutes per side) or until they reach an internal temperature of 165°F (75°C).
  5. In a saucepan, combine soy sauce, ketchup, rice vinegar, sugar, and cornstarch mixed with water; stir until boiling and thickened.
  6. Toss the crispy chicken balls in the sweet and sour sauce and serve hot with garnished green onions.
