- 1 lb boneless, skinless chicken thighs
- 1 cup fresh parsley, chopped
- 1 cup fresh cilantro, chopped
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground cinnamon
- 8 sheets phyllo dough
- 4 tbsp extra virgin olive oil
- Juice of 1 lemon
Instructions
- Heat 2 tbsp olive oil in a skillet over medium heat. Add onions and sauté until translucent. Add garlic and cook for another minute.
- Stir in cumin, coriander, cinnamon, salt, and pepper; cook for about 30 seconds. Add diced chicken and cook until browned.
- Remove from heat; mix in parsley, cilantro, and lemon juice. Let cool slightly.
- Unroll phyllo dough on a clean surface. Cut into strips approximately 4 inches wide; cover to prevent drying.
- Brush phyllo with olive oil. Place a tablespoon of filling at one end of the strip and fold into triangles until the end is reached.
- Fry in hot oil or bake at 400°F (200°C) for about 20 minutes until golden brown.
