  • 34 boneless, skinless chicken breasts
  • 1 cup fresh spinach
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian herbs
  • 1 cup panko breadcrumbs
  • 1 cup marinara sauce

Instructions

  1. Preheat oven to 375°F (190°C). Flatten chicken breasts to about half an inch thick.
  2. In a bowl, combine cream cheese, spinach, shredded mozzarella, salt, pepper, garlic powder, and Italian herbs.
  3. Spread the filling over each chicken breast and roll tightly. Secure with toothpicks if needed.
  4. Dip each roll in beaten egg and coat with panko breadcrumbs.
  5. Place on a parchment-lined baking sheet seam-side down and bake for 25-30 minutes until golden brown.
  6. Warm marinara sauce on low heat for dipping and serve hot.
