  • 1 cup fresh cranberries
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup whole milk (or almond milk)
  • 1/2 cup melted butter
  • 1 tsp vanilla extract
  • 1/2 cup sliced almonds (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt until combined.
  3. In another bowl, mix melted butter, eggs, milk, and vanilla extract until smooth. Add to dry ingredients and stir gently.
  4. Fold in cranberries and half of the sliced almonds carefully.
  5. Pour the batter into the prepared loaf pan and sprinkle remaining almonds on top.
  6. Bake for 50-60 minutes or until golden brown and a toothpick comes out clean.
  7. Allow cooling in the pan for 10 minutes before transferring to a wire rack; slice once cooled.
