  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 2 cups fresh corn kernels (or frozen)
  • 2 medium Yukon Gold potatoes, diced (about 2 cups)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or milk)
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Dice the onion and potatoes; mince the garlic.
  2. In the crockpot, layer the diced chicken breasts at the bottom. Add corn, potatoes, onion, and garlic.
  3. Pour in chicken broth until ingredients are submerged. Sprinkle with paprika, thyme, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  5. About 30 minutes before serving, stir in heavy cream to thicken the chowder.
