  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 3 cups tortilla chips
  • 2 cups shredded cheddar cheese
  • ½ cup sour cream (optional)

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked. Drain excess fat.
  2. Add taco seasoning and diced tomatoes to the skillet, mixing well.
  3. Preheat oven to 350°F (175°C). Layer half of the tortilla chips at the bottom of a greased baking dish.
  4. Pour half of the meat mixture over the chips, followed by black beans and another layer of tortilla chips. Repeat with remaining meat mixture and top with cheddar cheese.
  5. Bake for 20-25 minutes until bubbly and golden brown.
  6. Let cool slightly before serving and top with sour cream or other desired toppings.
