Instructions
- Preheat your oven broiler.
- In a bowl, whisk together the eggs. Set aside.
- Heat olive oil in a skillet over medium heat. Add diced bell peppers and sauté until softened, about 3 minutes. Stir in spinach until wilted.
- Add ground turkey to the skillet, seasoning with salt and pepper. Cook until browned, approximately 5-7 minutes.
