  • 1 whole chicken (45 pounds)
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • Zest of 1 lemon
  • Zest of 1 orange
  • 2 oranges, halved
  • 2 lemons, halved
  • 1 cup mixed green and black olives
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry. Season generously inside and out with salt and pepper.
  3. In a bowl, combine minced garlic, olive oil, chopped herbs, and citrus zest. Mix to form a fragrant paste.
  4. Rub the herb mixture all over the chicken and inside the cavity.
  5. Place halved oranges, lemons, and olives in the roasting pan around the chicken.
  6. Roast for about 1 hour 15 minutes or until juices run clear when pierced. Baste occasionally for added moisture.
