  • 2 medium sweet potatoes (about 1 lb), diced
  • 1 cup bell peppers (any color), chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Prepare your ingredients: Dice sweet potatoes and chop onions and bell peppers.
  2. Sauté aromatics: Heat olive oil in a large skillet over medium heat. Add onions and garlic; sauté until fragrant (3-4 minutes).
  3. Brown the beef: Increase heat slightly, add ground beef, breaking it apart with a spatula until browned (5-7 minutes).
  4. Add sweet potatoes: Stir in diced sweet potatoes, cumin, and chili powder. Cover skillet; cook until tender (about 15 minutes), stirring occasionally.
  5. Mix in bell peppers: When sweet potatoes are nearly done, add bell peppers and cook for another 5 minutes.
  6. Season & serve: Season with salt and pepper to taste. Top with fresh cilantro if desired.
