  • 8 oz rotini pasta
  • 1 lb ground beef or turkey
  • 2 tbsp taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup bell peppers, diced (mix of colors)
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • 1/2 cup ranch dressing

Instructions

  1. Cook the rotini pasta in boiling salted water until al dente; drain and set aside.
  2. In a skillet over medium heat, brown the ground beef or turkey; drain excess fat and mix in taco seasoning.
  3. In a large bowl, combine cooked pasta with meat, black beans, cherry tomatoes, bell peppers, corn, and red onion.
  4. Drizzle ranch dressing and lime juice over the mixture; toss gently to combine.
  5. Fold in cilantro just before serving. Taste and adjust seasonings if needed.
