  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 cup fresh parsley, chopped
  • 1 cup fresh thyme leaves
  • 8 oz egg noodles
  • 8 cups low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by washing and chopping the vegetables; dice the onion and mince the garlic.
  2. In a large pot over medium heat, sauté onions in butter or olive oil until translucent (about 5 minutes).
