  • 2 stalks fresh lemongrass, minced
  • 4 garlic cloves, crushed
  • 3 tbsp fish sauce
  • 2 tbsp brown sugar
  • 2 tbsp fresh lime juice
  • 1 tsp freshly cracked black pepper
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. In a large bowl, combine minced lemongrass, crushed garlic, fish sauce, brown sugar, lime juice, and black pepper. Mix well.
  2. Add chicken thighs to the marinade and coat evenly. Cover and refrigerate for at least 30 minutes to allow flavors to meld.

  4. Grill marinated chicken for about 6-7 minutes per side until internal temperature reaches 165°F (75°C).
  5. Allow the chicken to rest for a few minutes before slicing.
