Ingredients

  • 2 lbs beef chuck roast, cut into chunks
  • 4 medium carrots, sliced thick
  • 4 medium Yukon gold potatoes, cubed
  • 2 medium yellow onions, chopped
  • 4 garlic cloves, crushed
  • 4 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • Cornstarch (optional for thickening)

Instructions

  1. Wash and chop all vegetables into uniform sizes for even cooking.
  2. In a large skillet, heat oil over medium-high heat. Sear beef until browned on all sides.
  3. Add seared beef to the crockpot with chopped vegetables, garlic, bay leaves, thyme, pepper, Worcestershire sauce, and broth.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. About 30 minutes before serving, taste and adjust seasonings as needed.
  6. If desired, thicken stew with a cornstarch slurry before serving.
