Ingredients
- 2 lbs beef chuck roast, cut into chunks

- 2 tbsp Worcestershire sauce
- 2 bay leaves
- 1 tsp dried thyme
- 1/2 tsp black pepper
- Cornstarch (optional for thickening)
Instructions
- Wash and chop all vegetables into uniform sizes for even cooking.
- In a large skillet, heat oil over medium-high heat. Sear beef until browned on all sides.
- Add seared beef to the crockpot with chopped vegetables, garlic, bay leaves, thyme, pepper, Worcestershire sauce, and broth.
- Cover and cook on low for 8 hours or high for 4 hours.
- About 30 minutes before serving, taste and adjust seasonings as needed.
- If desired, thicken stew with a cornstarch slurry before serving.
