  • 1 medium head green cabbage, chopped
  • 2 medium carrots, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 14 oz canned diced tomatoes (fire-roasted recommended)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Once hot, add ground beef, season with salt and pepper, and cook until browned (5-7 minutes). Drain excess fat.
  2. Add diced onions and minced garlic; sauté until onions are translucent (about 3 minutes).
  3. Stir in chopped cabbage, diced carrots, Italian seasoning, salt, and pepper. Cook for another 3-4 minutes until cabbage starts to wilt.
  4. Pour in vegetable broth and canned tomatoes; mix well.
  5. Bring to a boil then reduce heat to low. Cover and let simmer for 30 minutes.
  6. Taste and adjust seasoning before serving hot.
