  • 1.5 lbs beef chuck roast
  • 2 medium carrots, chopped
  • 2 medium Yukon Gold potatoes, diced
  • 2 stalks celery, chopped
  • 2 medium onions, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 can (14.5 oz) diced tomatoes (packed in juice)
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt & pepper to taste

Instructions

  1. Prepare your ingredients by washing and chopping the vegetables.
  2. In a large pot over medium-high heat, sear the beef chuck in oil until browned on all sides.
  3. Add onions and garlic; sauté until softened. Then add carrots, celery, and potatoes.
  4. Pour in the beef broth and diced tomatoes; add bay leaves and thyme.
  5. Bring to a boil, then reduce heat to low and simmer uncovered for about 1.5 hours or until the beef is fork-tender.
  6. Taste and adjust seasoning if needed before removing bay leaves and serving hot.
