Ingredients

  • 3 lbs bone-in short ribs
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • Salt and pepper to taste
  • 2 sprigs fresh thyme or rosemary

Instructions

  1. Prep ingredients: Chop onions and mince garlic.
  2. Sear ribs: In a large skillet over medium-high heat, add oil and sear short ribs on all sides until browned. Remove from skillet.
  3. Sauté aromatics: In the same skillet, sauté onions and garlic until golden brown.
  4. Create sauce: Add red wine to deglaze the pan, scraping up bits. Stir in beef broth, soy sauce, brown sugar, salt, and pepper.
  5. Combine: Place seared ribs in a crockpot or Dutch oven; pour the sauce over them and add fresh herbs.
  6. Slow cook: Cover and cook on low for 6-8 hours or high for 3-4 hours until tender.
