  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, mix flour, granulated sugar, brown sugar, baking powder, and salt until combined.
  3. In another bowl, cream together softened butter and sugars until fluffy. Add the egg and vanilla; mix well.
  4. Gradually incorporate dry ingredients into the wet mixture until just combined.
  5. In a separate bowl, beat cream cheese until smooth. Fold in chocolate chips into the cookie dough.
  6. Drop spoonfuls of dough onto prepared sheets. Make an indentation in the center of each cookie and fill with cheesecake mixture before covering with more dough.
  7. Bake for 12-15 minutes until golden brown around edges. Cool on wire racks.
