  • 1 ½ cups rolled oats
  • 1 cup all-purpose flour
  • ¾ cup light brown sugar
  • 1 tsp ground cinnamon
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 cup diced apples (Granny Smith or Honeycrisp)
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine rolled oats, flour, brown sugar, cinnamon, baking soda, and salt; mix well.
  3. In another bowl, cream softened butter until fluffy. Gradually add brown sugar and beat until light.
  4. Beat in the egg and vanilla until fully incorporated.
  5. Fold the dry mixture into the wet ingredients gently until combined.
  6. Carefully fold in diced apples.
  7. Drop tablespoon-sized mounds of dough onto lined baking sheets about two inches apart.
  8. Bake for 12–15 minutes until edges are golden but centers are soft. Let cool slightly before transferring to wire racks.
