- 1 cup diced apples (Granny Smith or Honeycrisp)
- 1 tsp pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine rolled oats, flour, brown sugar, cinnamon, baking soda, and salt; mix well.
- In another bowl, cream softened butter until fluffy. Gradually add brown sugar and beat until light.
- Beat in the egg and vanilla until fully incorporated.
- Fold the dry mixture into the wet ingredients gently until combined.
- Carefully fold in diced apples.
- Drop tablespoon-sized mounds of dough onto lined baking sheets about two inches apart.
- Bake for 12–15 minutes until edges are golden but centers are soft. Let cool slightly before transferring to wire racks.
