  • 2 cups diced apples (like Honeycrisp or Fuji)
  • 1 cup dried cranberries
  • 1 cup chopped celery
  • 1 cup chopped sweet onion
  • 2 cups low-sodium vegetable broth
  • 1/4 cup unsalted butter
  • 1 tsp dried sage
  • 1 tsp dried thyme

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  2. Spread cubed bread on a baking sheet and toast for about 10 minutes until golden brown.
  3. In a skillet, melt butter over medium heat. Add chopped onions and celery; sauté for about 5 minutes until soft.
  4. Stir in diced apples and cranberries; cook for an additional 3-4 minutes until apples soften.
  5. In a large bowl, combine toasted bread cubes with the sautéed mixture and pour vegetable broth over it, tossing gently to combine.
  6. Transfer to the greased baking dish, cover with foil, and bake for 30 minutes. Remove foil during the last 10 minutes for a crispy top.
