  • 1 sheet puff pastry (about 1 lb)
  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 1 medium carrot, finely diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, sauté the chopped onion and garlic until translucent.
  3. Add ground beef; cook until browned. Incorporate the diced carrot and cook for an additional 5 minutes.
  4. Stir in beef broth, thyme, salt, and pepper. Simmer for about 10 minutes.
  5. Roll out the puff pastry on a floured surface to about 1/8 inch thick. Cut into circles to fit your muffin tin.
  6. Place pastry circles into greased muffin tins and fill with meat mixture.
  7. Cut smaller circles for lids and seal edges with a fork. Brush tops with egg wash.
  8. Bake for 25-30 minutes until golden brown.
