- 2 cups broccoli florets
- 2 cups fusilli or bowtie pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup olive oil
- 2 tbsp lemon juice (freshly squeezed)
- 1 tsp dried oregano
- Salt & pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente (8-10 minutes). Drain and let cool slightly.
- While pasta cooks, chop broccoli into bite-sized florets and slice cherry tomatoes and red onion.
- In a large bowl, combine cooled pasta, broccoli, tomatoes, onion, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper. Pour over the salad mixture and toss until well-coated.
- Cover with plastic wrap and chill in the refrigerator for at least 30 minutes before serving.
