  • 1 cup granulated sugar
  • 1 cup brown sugar (light or dark)
  • 2 large eggs
  • 3 cups all-purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp salt

Instructions

  1. Brown the unsalted butter in a saucepan over medium heat until golden brown and fragrant. Let cool slightly.
  2. In a large bowl, mix granulated sugar, brown sugar, and eggs until fluffy. Stir in the cooled browned butter.
  3. Gradually add the sifted flour, cream of tartar, baking soda, cinnamon, and salt to form a sticky dough.
  4. Chill the dough in the refrigerator for at least 30 minutes.
  5. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Scoop tablespoons of dough, roll into balls, then coat in cinnamon-sugar before placing on baking sheets.
  7. Bake for 10-12 minutes until edges are set but centers remain soft.
