  • 6 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prep your veggies: Wash and chop cabbage, carrots, onions, and garlic.
  2. Sauté onions and garlic: In a large pot over medium heat, heat olive oil. Add onions and garlic; cook until translucent.
