  • 1/2 cup powdered sugar
  • 1/2 cup ground hazelnuts (toasted)
  • 1/3 cup caramel sauce
  • 1 tsp vanilla extract
  • 1 egg yolk

Instructions

  1. In a mixing bowl, cream together softened butter and powdered sugar until light and fluffy. Add egg yolk and vanilla, mixing until well combined.
  2. Gradually mix in flour and ground hazelnuts until just incorporated—avoid overmixing for tender cookies.
  3. Shape dough into two discs, wrap in plastic, and refrigerate for at least one hour.
  4. Preheat oven to 350°F (175°C). Roll out each disc to about 1/8 inch thick; cut shapes with cookie cutters, ensuring to cut holes in half of them.
  5. Place on baking sheets and bake for 10-12 minutes, or until edges are golden brown. Cool completely before assembly.
  6. Spread caramel on half of the cookies, top with remaining cookies, and dust with powdered sugar if desired.
