Ingredients
Scale
- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups fresh broccoli florets
- 1 cup long-grain rice (white or brown)
- 2 cups shredded cheddar cheese
- 1 tsp garlic powder
- 2 cups low-sodium chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare all ingredients: chop broccoli into bite-sized pieces and cube the chicken.
- In a large skillet over medium-high heat, add olive oil. Once hot, add chicken cubes, season with salt and pepper, and cook until golden brown on all sides.
- Stir in rice until coated with oil. Pour in chicken broth and bring to a simmer. Cover and let cook until the rice absorbs most of the liquid (about 15 minutes).
- Add broccoli florets to the skillet, sprinkle cheese on top, cover again, and let melt for about 5 minutes.
