  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh broccoli florets
  • 1 cup long-grain rice (white or brown)
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients: chop broccoli into bite-sized pieces and cube the chicken.
  2. In a large skillet over medium-high heat, add olive oil. Once hot, add chicken cubes, season with salt and pepper, and cook until golden brown on all sides.
