  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/4 cup melted unsalted butter
  • Zest of 1 orange
  • 1 cup fresh or frozen cranberries (do not thaw)
  • For Streusel: 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1 tsp cinnamon
  • 3 tbsp cold unsalted butter

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, melted butter, eggs, and orange zest until smooth.
  4. Gently fold the wet ingredients into the dry ingredients and add cranberries.
  5. For the streusel topping, mix brown sugar, flour, cinnamon, and cold butter until crumbly.
  6. Fill each muffin cup about two-thirds full with batter and sprinkle generously with streusel.
  7. Bake for 20-25 minutes until golden brown; a toothpick inserted should come out clean.
