  • 1 lb ground turkey
  • 2 cups fresh spinach, chopped
  • ½ cup grated Parmesan cheese
  • ½ cup plain breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • ½ onion, diced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste
  • Italian herbs (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Sauté onions and garlic in a skillet over medium heat until golden brown.
  3. In a bowl, combine ground turkey, sautéed onions and garlic, spinach, breadcrumbs, egg, Parmesan cheese, salt, pepper, and herbs. Mix until just combined.
  4. Shape mixture into meatballs (about 1 inch) and place on the prepared baking sheet.
  5. Bake for 20-25 minutes or until internal temperature reaches 165°F (74°C).
  6. Meanwhile, whisk together heavy cream and chicken broth in a saucepan; season with salt and pepper and simmer gently.
  7. Once meatballs are cooked through, transfer them to the sauce and simmer for an additional 5 minutes.
