  • 2 lbs russet potatoes, sliced into thin rounds
  • 1 lb thinly sliced sirloin or ribeye beef
  • 1 cup sliced bell peppers (mixed colors)
  • 1 medium yellow onion, chopped
  • 2 cups shredded provolone or mozzarella cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup beef broth
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by washing and peeling the potatoes. Slice them into thin rounds. Chop the bell peppers and onions into bite-sized pieces.
  2. In your crockpot, layer half of the sliced potatoes at the bottom. Add half of the beef slices, followed by half of the bell peppers and onions. Sprinkle garlic powder on top.
  3. Pour half of the cream of mushroom soup evenly over this layer and add half of the beef broth.
  4. Repeat layering with the remaining ingredients in the same order: potatoes, beef, peppers, onions, cream soup, and broth.
  5. Top with a generous handful of shredded cheese.
  6. Cover and cook on low for 6-8 hours or high for 4-5 hours until everything is tender.
