  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups enchilada sauce (store-bought or homemade)
  • 8 corn tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 can black beans (15 oz), rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Cilantro for garnish (optional)

Instructions

  1. Lightly spray the slow cooker with cooking spray.
  2. Season the chicken breasts with salt and pepper and place them at the bottom of the slow cooker.
  3. Pour half of the enchilada sauce over the chicken.
  4. Layer black beans and corn on top.
  5. Cut corn tortillas into quarters and layer them over the mixture.
  6. Sprinkle half of the shredded cheese, followed by onions and bell peppers.
  7. Pour the remaining enchilada sauce on top and add leftover cheese.
  8. Cover and cook on low for 6-7 hours or high for 3-4 hours until bubbly.
  9. Serve hot, garnished with fresh cilantro if desired.
