  • 1/2 cup natural peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 2 tbsp brown sugar
  • 1 tsp red pepper flakes (adjust to taste)
  • 2 green onions, chopped (for garnish)
  • 1/4 cup crushed peanuts (for garnish)

Instructions

  1. Prepare your ingredients by chopping garlic and grating ginger.
  2. In a skillet over medium heat, sauté garlic and ginger until fragrant (about 1-2 minutes).
  3. Place the chicken breasts in a crockpot and cover with sautéed garlic and ginger.
  4. In a bowl, whisk together coconut milk, peanut butter, soy sauce, lime juice, brown sugar, and red pepper flakes until smooth.
