  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • ¼ cup honey
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the butternut squash lengthwise and scoop out the seeds. Drizzle olive oil over each half and season with salt and pepper.
  3. Place the squash cut-side down on a baking sheet lined with parchment paper. Roast for 30-35 minutes until tender.
  4. While the squash roasts, heat olive oil in a skillet over medium heat. Season chicken with garlic powder, salt, and pepper before adding to the skillet.
  5. Sauté chicken for about 6-7 minutes per side until golden brown and cooked through (165°F internal temperature).
  6. Shred the chicken and mix it with honey and chopped rosemary. Spoon this mixture into each roasted butternut squash half.
  7. Serve immediately or let sit while you prepare side dishes.
