  • 3 lb beef chuck roast
  • 2 tbsp extra virgin olive oil
  • 2 medium onions, chopped
  • 4 garlic cloves, minced
  • 28 oz canned crushed tomatoes
  • 1 cup dry red wine
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh rosemary, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 2 cups low-sodium beef broth
  • Salt and pepper to taste

Instructions

  1. 1. Prepare your ingredients by chopping onions, carrots, and celery into uniform pieces and mincing garlic.
  2. 2. In a large Dutch oven over medium-high heat, add the olive oil and sear the beef chuck roast on all sides until browned (about 4-5 minutes per side).
  3. 3. Add the chopped onions and minced garlic. Sauté until onions are translucent (about 3-4 minutes).
  4. 4. Pour in the red wine and scrape up any browned bits from the bottom of the pot; let simmer for 2-3 minutes.
  5. 5. Stir in the crushed tomatoes and beef broth until bubbling.
  6. 6. Add thyme, rosemary, salt, and pepper to taste; nestle the chuck roast back into the pot.
