Ingredients

  • 2 cups konjac noodles (or zucchini spirals)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (mixed colors), diced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Cook the konjac noodles according to package instructions; drain and rinse under cold water.
  2. Dice the cherry tomatoes, cucumber, and bell peppers.
  3. In a bowl, whisk together olive oil, vinegar, oregano, basil, salt, and pepper.
  4. In a large mixing bowl, combine cooled noodles with chopped veggies. Drizzle with dressing and toss gently until coated.
