  • 1/2 cup canned pumpkin puree

  • 1/4 cup brown sugar
  • 1/2 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup mini marshmallows
  • 1/4 cup unsalted butter (softened)
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Beat in the egg and vanilla extract.
  3. Gently fold in the canned pumpkin puree until well combined.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Fold in chocolate chips and mini marshmallows gently.
  6. Drop tablespoon-sized scoops of dough onto prepared baking sheets about 2 inches apart.
  7. Bake for 12-15 minutes or until edges are golden but centers remain soft.
  8. Allow cookies to cool slightly before serving.
