  • 1 cup bell peppers, chopped (mixed colors)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • 2 cups low-sodium chicken broth
  • 2 green onions, sliced (for garnish)
  • 2 tbsp olive oil
  • Juice of 1 lemon

Instructions
