  • 8 oz egg noodles or rice noodles
  • 1 cup mixed bell peppers, sliced (red, yellow, green)
  • 1 cup broccoli florets
  • 3 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey or brown sugar

Instructions

  1. Gather and chop vegetables into bite-sized pieces.
  2. Boil salted water, add noodles, and cook until al dente. Drain and set aside.
  3. Heat oil in a skillet over medium-high heat. Add shrimp and cook for 3-4 minutes until pink and opaque.
  4. Toss in bell peppers, broccoli, and minced garlic. Stir-fry for about 3-5 minutes until veggies are tender yet crisp.
  5. In a bowl, whisk together soy sauce, sesame oil, and honey/brown sugar. Pour over the stir-fry mix.
