  • 2 cups rotini pasta
  • 1 cup fresh corn (off the cob)
  • 1/2 cup red onion (finely chopped)
  • 1 cup bell peppers (diced, mixed colors)
  • 1/4 cup cilantro (chopped)
  • 1/4 cup lime juice (freshly squeezed)
  • 1/2 cup mayonnaise
  • 1 tsp chili powder
  • Salt & pepper to taste

Instructions

  1. 1. Cook the rotini pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. 2. While the pasta cooks, prepare the vegetables: chop corn off the cob, dice bell peppers, and finely chop red onion (soak in cold water to mellow flavor).
  3. 3. In a large bowl, combine cooked pasta, corn, bell peppers, red onion, and cilantro.
  4. 4. In a separate bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
  5. 5. Pour dressing over the pasta mixture and toss gently until evenly coated.
