  • 1 packet taco seasoning (approx. 1 oz)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 4 cups tortilla chips
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • ½ cup sour cream
  • ¼ cup sliced green onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked (about 5-7 minutes). Drain excess fat.
  3. Stir in taco seasoning, diced tomatoes, and black beans; simmer for 5 minutes.
  4. In a large baking dish, layer half of the tortilla chips, half of the beef mixture, and half of the shredded cheese. Repeat layers.
  5. Bake for 25-30 minutes until golden brown and bubbly. Let sit for 5 minutes before serving with sour cream and green onions.
