  • 3 medium zucchinis, sliced
  • 1 lb lean ground beef
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis into thin rounds and lightly salt them to draw out moisture.
  3. In a skillet, brown the ground beef over medium heat until fully cooked; drain excess fat.
  4. Stir in pizza sauce, Italian seasoning, and red pepper flakes; simmer for 5 minutes.
  5. In a greased baking dish, layer half of the zucchini slices, followed by half of the meat mixture and half of the mozzarella cheese. Repeat layers.
  6. Bake for 30-35 minutes until bubbly and golden. Let cool slightly before serving.
