  • 2 cups mixed bell peppers (red, yellow, green), chopped
  • 4 cloves fresh garlic, minced
  • 1 can (14.5 oz) diced tomatoes (low-sodium)
  • 2 tsp Italian seasoning
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop bell peppers into bite-sized pieces.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic for about 30 seconds until fragrant.
