- 8 oz fresh egg noodles
- 1 cup carrots (thinly sliced)
- 1 cup bell peppers (any color, thinly sliced)
- 1/2 cup green onions (chopped)
- 2–3 cloves fresh garlic (minced)
- 3 tbsp low-sodium soy sauce
- 2 tbsp oyster sauce (optional)
- 1 tsp sesame oil
- Splash of water

- Prep your ingredients by slicing chicken and veggies into bite-sized pieces.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the chicken and sauté until golden brown and cooked through (about 5-7 minutes).
- Stir in minced garlic, carrots, and bell peppers. Cook for another 3-4 minutes until veggies are slightly tender but still crunchy.
- Meanwhile, cook the egg noodles according to package instructions until al dente. Drain and set aside.
- In a small bowl, mix together soy sauce, oyster sauce (if using), sesame oil, and a splash of water.
- Add cooked noodles to the skillet with chicken and veggies. Pour the sauce mixture over everything and stir for about 2 minutes until heated through.
