  • 4 boneless, skinless chicken breasts (about 680g)
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 firm cucumbers, diced (about 300g)
  • 1 cup Greek yogurt (240g)
  • Juice of 1 lemon
  • 2 tbsp fresh dill or mint, chopped

Instructions

  1. Marinate the chicken by mixing olive oil, garlic, paprika, cumin, salt, and pepper in a bowl. Coat the chicken and let it sit while preparing the salad.
  2. In a separate bowl, combine diced cucumbers with Greek yogurt, lemon juice, dill or mint, salt, and pepper; mix well.
  3. Heat a skillet over medium heat. Cook marinated chicken for about 5-7 minutes per side until golden brown and reaches an internal temperature of 165°F (75°C).
  4. Allow the chicken to rest for 5 minutes before slicing into strips.
  5. Serve sliced chicken alongside cucumber salad and drizzle with any remaining marinade if desired.
