  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 8 corn or flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 cups enchilada sauce (store-bought or homemade)
  • ½ cup sour cream (for serving)
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Sauté diced chicken for 7-10 minutes until golden brown.
  3. Add minced garlic and cook for an additional minute. Pour in half the enchilada sauce and simmer.
  4. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in a greased baking dish.
